It seems I've been installing the incorrect Wi-Fi driver. My motherboard is a Prime B550m-A WiFi II, not the standard WiFi model. That means it uses a Mediatek chipset instead of the Intel one found in regular Wi-Fi cards. Always make sure you're getting the right drivers.
