For my upcoming build I plan to use a nzxt h1 and connect everything via a Thunderbolt dock with the display plugged into it. Will I still need to connect directly to the GPU or adjust how I run it? It doesn't matter on the desktop, the only signal a Thunderbolt port might carry is from the IGPU. Not the dedicated GPU, since desktop and laptop Thunderbolt are completely different. Your board should not have any display connections either—something seems off about what it is.
MSI MEG Z690 Unify Mini ITX motherboard is available, and many models from the Asus ProArt line include this option. The board supports mini DP connections, while the Asus boards feature ATX form factor with a full-size display port.
Incorrect information. My ProArt boards allow two displays from the GPU.
