I wouldn't use server 2012 because it wouldn't provide a great desktop experience. Opt for Windows 8.1 and upgrade to Windows 10 instead.

Server 2012 may not provide a smooth experience. Compatibility problems could arise when attempting to download software. Consider upgrading to version 10.

Avoid standard Win 8.1 Pro; opt for standard Win 8.1 Pro or better. The Server OS is designed for server environments, not home use. Embedded solutions are intended for POS systems and basic machines such as information kiosks or ATMs.
