Sorry, I completely forgot about the TI part when I asked my question earlier. Regarding the actual performance of 5070Ti versus 5080, I haven't looked into that. I came here first for some expert opinions before trying to form my own thoughts 😅
I think there was a comparison between the 5070Ti and 9070XT, and it seems unlikely they would match up well on high-end displays, but I'm open to hearing the perspectives and data from others. I'll also take a look at the video.

So after some more looking and researching, I’m still a bit uncertain about the GPU choice. Everything else seems manageable. The 7900xtx looks like a solid card, similar to the 5070Ti in price. Both seem comparable, though the xtx tends to be pricier more often. The 5080 appears better, but if it’s just a 10-15% difference, I’m not sure it’ll make much of a difference. I’m not sure if some features of the 5080 are worth the extra cost.

A 5080 is definitely more expensive, at least £300 in most cases. Nvidia seems like the best path forward for me. DLSS looks promising, my monitor supports gsync and it performs better, plus the streaming encoder adds a nice bonus. Still, the VRAM of an xtx would be ideal for my heavily modded Skyrim VR sessions and streaming simultaneously.

Am I overlooking something obvious here, or are these really just minor differences? Maybe I should choose the cheapest option that works. I’ve put together various builds and one I can get pre-built for about £200 extra. It’s a bit much, but it helps see the numbers clearly:

Thanks for the assistance! The overall setup will be more affordable. It might not seem as high-end, but it’s cheaper and still looks solid. Since the specific GPU isn’t available, I can pick an alternative. This keeps the cost around 2.5k with some new storage, though it’s a 5080 instead of a 5070ti—definitely better. I think I’ll need to reinstall Windows too, but that’s not a big deal. I’m probably going to stick with Nvidia for now, which makes the decision easier. Thanks again!

So, I've probably gotten much closer to figuring this out and deciding on something. I did have some questions and wanted some opinions though. I've been looking at what I can and can't do to try make this easier for me to decide on. It is possible I can push closer to 3k than 2k, just might mean waiting a little bit longer. But if that's hugely more worth doing then I'd do so pretty happily. It's not totally out of budget.
It does seem like I should go the 5080 for my monitor and goals. If I'm right then at least that's settled? Works with the gsync monitor and streaming parts too.
For the CPU, I noticed there's actually a few X3D's. 7800, 9800, 9900? I'm guessing the 9900 is overkill but is the £100 jump from 7800 to 9800 very worth doing, especially if this is my pc for the batch of years?
I've also seen debates on if Mobo needs to be B850/x870 chipset but does it matter? Same thing with PSU. As long as it's gold and 850+ wattage is it really going to matter?
For RAM, I've seen something about making sure to get a AMD's E.X.P.O.?
Different GPU brands. What's it matter? So many versions of the same GPU.
