Sorry for the double post but just wanted to give a quick update.
After reinstalling Windows from scratch yesterday, I tried playing one of the games that crashed my pc more frequently (usually within 5 minutes of launch) and I managed to play for about 1h30m without a single hiccup.
Considering my paranoia I don't want to call it a victory yet... but definitely a lesson learned: don't think it's definitely a hardware issue just because Windows doesn't give you any errors or minidumps. I'll do more testing today and let you guys know how it went

The minimum suggested PSU is 750W. XFX suggests 850W, but you're using a 650W unit. You're also experiencing power fluctuations.

Ah, you might be correct
👍
I used the 650w from there:
https://www.amd.com/en/products/graphics...-6800.html
But I should have verified the specific model instead of just the reference.

The problem appears to have disappeared after reinstalling Windows. I don't understand why, since I couldn't obtain any minidump or error messages in the event viewer. Now I've been playing all my games without any issues at all. Thank you very much for your help and support! I'm going to mark @Unolocogringo's reply as the answer but I really appreciate everyone who took a moment to look this over!
P.S.: I just wanted to confirm that the issue existed even with a 750 PSU, which is the minimum recommended. At this point I think it has nothing to do with hardware and more likely with some background activity in Windows, but now I know exactly what to upgrade first and I can keep that in mind!
