I just assembled my first PC and assumed everything would work fine. The CPU temperature hovered around 55-56°C. The fans were extremely loud, so I tweaked them using nzxt cam and the BIOS settings. When I installed multiple games at once, the PC shut down. During installation, the CPU temps reached about 83°C. Is this typical? My NZXT Kraken Elite pump seemed to fail right out of the box. I don’t feel any vibrations when holding it. I also checked the AIO with the pump cable disconnected and reconnected; both stayed at 60°C during boot. Please forgive the grammar, I’m exhausted and thought everything was okay.

Based on its original purpose, could you clarify? Also, which processor are we referring to?

I'm starting the game now, but performance drops sharply from 50 to around 7 repeatedly.

Absolutely, you should be pleased it isn't 95. Those components speed up until they reach 95°C or if they hit thermal limits.
