If you need to purchase now, I recommend thinking about an AMD Ryzen configuration. For the price you pay for the 7600k, you could likely afford a Ryzen R5 1600 with six cores and twelve threads, which also supports overclocking.
I own one myself, and it’s interesting to note that my setup includes an ASRock board—so far it works well together. I’ve already boosted it to 3.7ghz on stock cooling (though I still have room for improvement).

I wouldn't normally recommend a water cooler. On a 7600k system, it's worth considering upgrading to a 7700k for better performance.
The question asks why the 7600k, if using Intel, should be delayed until Coffee Lake arrives.
I believe it's only a few months away. I recently assembled a Ryzen setup, but I noticed discussions about coffee lake this week.
Wait for the next generation Intel chips.
If you want to go further, stick with ASUS or ASRock... MSI hasn't had a good track record with them :/
