I checked out the gaming scene and noticed the Ryzen 5 3600 is around $200 less than before. That makes me wonder if it offers more value for the price.

10700 offers superior performance, while 3600 provides excellent value. If the savings from the CPU are redirected to a graphics card upgrade, you'll experience improved gaming results.

they had two ryan 5 3600 chips—one 95w and another 65w. the 95w is about $80 more expensive, so it depends if that extra cost matters for your needs.
