if it doesnt autoconfigure up to that speed, something in the chain of cables and devices is not liking the 10G speed. wether that's your cable, the router, the network card, a fussy connector not hooking in quite right, etc.. also - if you're going trough network cables in the wall (i.e. your cat7 cable plugs into a socket in the wall, and on the router end there's another wall socket that plugs into) that most likely isnt good enough to push gigabit. i forget the exact details, but the spec on CAT6A (the most lenient 10gig one...) comes down to if you have your connectors made as good as they can be, 4 connectors mean you fall out of spec.

You've discovered the fix—your router only handles up to 1 Gbps on Ethernet, but for 10 Gbps you need the SFP+ side. Using the adapter should resolve the issue. Appreciate the assistance!
