If you're in the US, the 5800XT for $155 is presently more affordable on Amazon compared to the 5800X at $161. Both share the same CPU but the 5800X offers improved speed and a lower price point. You might also consider the 5700X for $137—it's quite similar but features less power consumption right out of the box. (Don't worry about the R7 5700 non-X; it uses a different chip and is slower than the Ryzen 5 5600.) The R5 5600 is currently priced at $123, making it significantly cheaper than the 5800X. The 5600X costs $143, which isn't worth it if you can find the non-X model for $20 less. I wouldn't suggest using the stock cooler for a 5800X, though the 3600X came with the Wraith Spire, offering better performance than the Stealth. It should still meet specifications, and a minor undervolt adjustment could be beneficial. If you plan to run these at their default settings, either the R5 5600 non-X or the R7 5700X will work well with the stock cooler. They each have a 65W TDP, so you can cap their power usage around 88W—well below what the 3600X draws under load.

It seems like you're considering cheaper options—either the 5600 non-X or the 5700X with fewer cores—and opting for a stock cooler instead.
