I'm not sure if Embedded behaves very differently from regular systems. My concern is based on the latest Microsoft guidance for embedded updates. There isn't a direct upgrade option—you'd have to install through Windows Vista first. You'll also need installers and possibly keys, which are becoming harder to locate since they're no longer officially sold. Overall, you're roughly ten years behind schedule.
