I'm based in Israel and use the British B6312 phone jack. I'm checking if it's possible to connect Ethernet via a cable from B6312 to RJ11, then using an adapter from RJ11 to RJ45.

Unlikely, phone cables typically contain two or four pairs, while Ethernet uses eight. Phone cables are rarely twisted pair, particularly inside homes. There are adapters that can transmit DSL through phone wiring, but they tend to be expensive and usually limited to 100Mbit speeds. It's also important to ensure the signal stays within the incoming phone line.
