Hello everyone,
As the title suggests, I am currently in the process of building out a server using consumer parts for a game server and NAS. As my budget is quite limited, I'll be trying to not break the bank as the server is more so of a side project.
I've recently upgraded my motherboard and CPU from a Ryzen 7 3700X and AsRock B450M Pro4 to a Ryzen 7 5700X3D and a used Asus ROG Crosshair VIII Hero as I found a deal for the motherboard.
I'm thinking of selling the 3700X and getting a 5700G for the server so I wouldn't need to use a GPU for it. But now I'm wondering if I should just grab a decently priced used kit of a 5900X, Asus B550-E Gaming and 32GB of 3600MT/s CL14 RAM for around 390 Euro and get a low power GPU.
The server would be running mostly just during the day and evenings for backups and Plex, and occasionally game servers once I have friends.

Usually, neither NAS responsibilities nor game servers need a lot of CPU power. Having more RAM is more valuable than additional CPU, in my opinion.

Would the 8 core 5700G suffice for ProxMox alongside Plex, a modified MC, and an Arma 3 server with variable player counts?

I recently upgraded to a very affordable NAS about a year ago with an i7 4790k, 16GB RAM, and an ITX motherboard I found on Reddit. I have a comparable setup, using Plex, photoshare, VPN, and occasionally hosting a Minecraft server. I used Unraid for my operating system and would strongly suggest it if you haven’t chosen one yet. The interface is very user-friendly, and the native Docker support is excellent.

My NAS reaches its limits in CPU and RAM when running all my Docker containers together with an Ubuntu VM hosting an unmodified Minecraft server. I often stop some of the containers during peak usage on the MC server. Still, the 5700G would offer much better performance than the 4790k, and with an additional 32GB of RAM, I believe it could easily handle your needs. If not, you can always sell and upgrade later.

Thank you for the positive feedback. The current setup with 16GB RAM and the 3700x using an AsRock B450M Pro4 that supports headless boot has worked well so far as a test server. I'm still exploring all options. Right now, I'm running on Proxmox and a TrueNAS Scale LXC, working through any issues. I'm planning to replace the boot drive and PSU soon, which should make it a fully functional server eventually.
