I run Debian with Cinnamon, it functions well. Mint is fine, but from my perspective it’s better to stick with Debian and install any desktop environment you prefer later.

I recommend Kubuntu, since it appears as a more conventional Windows desktop by default. It offers great customization options and remains very stable without consuming much memory. I adopted Kubuntu after Canonical announced Unity's discontinuation, and I made it resemble Unity. A friend currently uses Kubuntu and enjoys it. Another choice is Ubuntu MATE, which I use as a secondary operating system on my desktop. If I recall correctly, MATE also consumes minimal resources.
