I've been experimenting with Project Spark and CryEngine, but I find Spark restrictive. CryEngine appeals to me, yet creating a third-person game would feel cumbersome since it leans heavily toward FPS mechanics. What engine could I choose for a third-person experience that lets me smoothly toggle between first and third person? I want it to blend elements from Assassin's Creed and Tomb Raider while supporting classic FPS modes, similar to Skyrim. Any suggestions?

I'm only familiar with Unity, but it's definitely not an easy task.

Unity is probably better for you, its free and you can try it out for yourself. Also theres more documentation for Unity.

Darkplaces is an open source engine (think Quake on steroids). I used to play Nexuiz 2.5.2 which used it and there were some setting for first and third person. You can even get a blender addon that uses this engine for rendering.

Not that I have experience, but all of the games I've played that use Unity 3D have been great. Try starting there! Good luck on the project!

For an indie project, Unity3D or Unreal Engine 4 are excellent choices. If budget isn’t an issue, both offer extensive online resources and tutorials. I began with Unity, then explored CryEngine. It proved manageable once you adjusted the camera setup for the player character. Eventually, I switched to UDK because it felt more streamlined, which led me to UE4. I haven’t looked back since.
