I lacked USB 2.0 ports on my motherboard or case, leaving no real choice. I resorted to using a USB 2.0 stick because that was the only option available nearby. Setting up Windows on USB 2.0 proved quicker than anticipated, though it required a long time to generate the installation media.

For clarity, the Mobo makers recommend downloading their Windows USB installer for Windows 7 specifically on the latest Z270 motherboard. This guidance appears on their website under specifications. Make sure to check the bottom of the page and look for the link provided by Gigabyte.

The problem occurs when attempting to set up Windows 7 using USB 2 on a USB 3 device. I experienced a lot of frustration and chose to switch to Windows 10 instead.

It doesn't depend on the specific device you choose, whether it's a disk or a USB 2.0/3.0 connection. What changes are mainly the setup duration. If you possess a USB 3.0 flash drive that truly operates at high speeds and your motherboard supports USB 3.0 ports, opt for USB 3.0. The main challenge arises with operating systems that lack USB 3.0 support, such as Windows 7. In those cases, due to driver issues, the installation might fail after booting from the drive. Additionally, some motherboards were initially incompatible with USB 3.0, but modern systems like Windows 10 should handle it without problems.

All USB 3.0 flash drives work with USB 2.0 connectors. If the speed feels too slow, simply plug the USB 3.0 drive into a USB 2.0 port, and it will operate at USB 2.0 performance.

It seems likely because: When issues arise, they offer assistance. They can't help with things outside their control. Earlier versions of Rufus and possibly this Gigabyte utility, but not the official Microsoft tool they used, supported booting Windows 7 via EFI. If you relied on a Microsoft solution, you needed the genuine Windows 7 installation at that time. Much later, Rufus expanded its capabilities, and it's possible Gigabytes developed this feature.

I’d recommend keeping your Windows ISO backed up somewhere safe. It’s hard to explain why people recommend using the Windows creation tool—if anything goes wrong, you’ll have to reinstall it. Just download the ISO file, store it on a USB drive if possible, and then use Rufus or EtherCad to create a bootable Windows flash drive when needed.

If you want to see the issue with cheap cable, here a fun video with the iPhone cable, but the issue still stands, and you can read up more scientific articles on it if you are interested.
