A version similar to Xubuntu works well. It runs efficiently even with limited RAM, and the CPU usage is mainly relevant for demanding tasks.

You might also consider Zorin OS or its lighter version, Zorin Lite, which also supports XFCE. Both are lightweight according to their specs, with Lite being even more minimal. Zorin uses an older LTS kernel but includes necessary overhead, making it a good trade-off. Check out the Zorin page for more details.
