Consider exchanging a Corsair 1000w modular for a 750w modular
I'm purchasing a new system to upgrade my old one, but I'll keep some parts from the previous setup. The PSU I’m using is a Corsair HX1000.
I have an extra Corsair TX750M ready, and I intend to replace this in my old PC (i7 9700K, 64Gb DDR4, likely GTX1070, possibly RTX3070Ti, with one M2 and an SSD or HDD).
First of all, will the TX750M be able to handle it?
Secondly, since both are modular PSUs, can I simply swap them over while keeping the necessary cables intact? Or should I also replace those cables?

Only utilize the cables that come with the PSU. The choice varies based on the model and year, with Corsair offering type 3, 4, and 5 cables that should not be swapped.
Type 3 and 4 concerning pcie/sata cables share the same pinout, with the main distinction being that type 4 cables include an inline capacitor for ripple suppression. The 24pin pinout seems to vary between types, so it wouldn't be advisable to use a type 3 24pin on a type 4 24pin power supply or vice versa. However, I think the Txm is semi-modular and that the 24pin remains fixed.
Type 5 has a different physical design and won't fit type 3/4.

😀 Exactly, the 24 pin on the 750w is working fine – great job, well done! I’m planning to replace some components and might go all out. I’ve decided to bring the GPU (3070Ti) over to the new setup and swap my old 1070 for it – it’ll be easier than taking apart my current system!
