I’m purchasing a used LGA 1155 board online. I’m using an LGA 775 motherboard now. The seller mentioned they won’t supply screws or cables. Should I buy cables myself? Do my existing LGA 775 cables fit the new one? Also, what additional items should I consider, such as thermal paste? Thanks. I have an Intel DG41WV and am looking at options like the DG61WW, Gigabyte GA H61M S1, or similar.

As long as you possess SATA cables and screws, you're good to go—other cables aren't included with the motherboard.
