You're looking to overhaul your entire network without cables. The new setup offers a massive 500Mbps upload and 500Mbps download, which is a huge upgrade. Your current switches are 8-port at 100Mbps, and the router is being handed back to the old ISP—good news! You want Wi-Fi covering two floors using both 2.4GHz and 5GHz bands, with one access point per floor and multiple Ethernet connections downstairs for fiber and high-speed ports upstairs. The budget is around €300, excluding upstairs switches. You mentioned considering Ubiquiti AC AP Lite and Edgerouter Lite, but need more Ethernet ports. You're not interested in any further details about the toilet paper link. Let me know if you'd like help planning the layout or selecting gear.

Ubiquiti Access Points are suitable for your setup. Choose based on the number of clients and speed needs. How many clients do you have? Which additional services will run (VPN, Squid)? There are other EdgeRouters available, and I can also suggest MikroTik options. Another possibility is using pfSense as a route.
