You can run Minecraft locally while keeping it hosted on your server. Use a remote desktop tool to connect from your computer and view the console as if you were inside the server. This way, you maintain control over the server and access the console without needing to start the game remotely.

I'd run Windows on both systems, using FreeNAS but not sure about other options. For BluRay ripping, I'm not sure if FreeNAS supports it well.

I need to launch it and view the console directly without using RDP to connect to the machine. Also, I want someone else in my home to be able to start and stop it without giving them access to my server.

keep it running continuously. Minecraft wasn't built with remote launching in mind, so it will rely on an operating system or program support.
