I don't have personal preferences, but you might want to consider options like KVM, Xen, or VMware ESXi depending on your needs.

Your Windows Hyper-V runs smoothly, but after replacing the USB, the hypervisor isn’t affecting things. Have you considered using Untangle or another Linux-based router/firewall distribution?

I’d run this setup directly on hardware first, before attempting it in a VM. The challenge might lie anywhere from the virtualization stage or possibly pfSense’s capacity to utilize that NIC. Remove any suspicion about virtualization and try to emulate it. This will reveal the exact issue.
