I understand the situation where system fairness isn't guaranteed. With prices at Micro Center, you can choose between a Ryzen 3600 and RX 5700 or a 2700X and a 5700XT. For gaming, the better option depends on your needs—consider performance and budget. Any advice would be appreciated.

I would select 3600 and 5700XT. You can customize a 5700 to match the look of a 5700XT.

Are you using 144hz? Would you think 60 fps is low? If you're okay with more than 60 fps, go for 2700x/5700p and 1440p resolution.

3600 works well for gaming, but performance depends more on the GPU, making the XT a stronger choice overall.

Seconded. 3600 stands out as a better gaming CPU versus the 2700X, and the 5700 can be updated to a BIOS version for the 5700 XT. It’s pretty obvious in this case.
