Understandable circumstances you are in right now. The demand for these processors are very high and not enough stock is out there. AMD is at the mercy of TSMC to produce as much chips as possible with their given manufacturing capabilities they agreed upon with TSMC, while making chips for Big Navi and the SoCs inside PS5/Xbox Series X consoles. It will be a while for prices to stabilize and drop due to inflation of these products from scalpers and again, supply/demand. If you want higher performance out of your system, then I think the 5800X might be worth while for you and just in case you upgrade your graphics card down the road from now, your system will still be able to handle it.

When games require eight cores, these processors will soon be surpassed by more advanced models.

i'm in similar position to you I have the 5800x on preorder - i was unlucky on launch and my order went from stock to preorder and it wont be for a few weeks before it comes back in stock. now i was lucky and got a 5600x. i play AAA titles on my 3070FE @ 1440p fine. no issues at all. so now wondering if it is worth waiting for the 5800x or just cancel the preorder

I’m pretty sure I’d be spending too much with a 5800x now.

I’d suggest the 5600x since the 5800x is too expensive. Usually I find it worth it if you opt for the 5800x to add the extra £80 and move up to the 5900x. Personally, the 5800x seems overpriced compared to its value.

I'm close to making this choice. Based on the prices in Turkey, a 5800x costs about 33% more than a 5600x. I think I'll skip it since I'm convinced the RTX 3080 can handle the workload if needed later.

I rushed in and chose the 5900x, but for the additional £80 I’m receiving significantly more value.

Sure! Let me calculate those for you.
For a 5600x resolution, the minimum wage is typically around $15–$18 per hour depending on location.
A 5800x screen would generally cost between $20–$25 per hour.
Minimum wage varies by region but often starts near $12–$15 per hour.
Let me know if you need more specifics!
