These two titles are excellent choices. I particularly enjoy New Vegas for its engaging narrative and side activities. Fallout 3 offers entertainment but can feel repetitive and lacks depth in its story. In certain aspects, some Fallout 3 missions surpass those in Fallout 4.

I own Vegas and the only criticism I can offer is about the poor facial animations and low-quality visuals (though the game itself is quite outdated).

FO3 stands out with its superior World and enemies. The environment is really messed up. NewVegas is also a solid game. Both performed flawlessly during my setup.

I favored 3 over NV, though that might just be due to playing 3 earlier and the 'freshness' of Fallout games fading. I really enjoyed NV, though. I’d suggest getting both, though. Personally, 3 feels more engaging for exploration, while NV shines in role-playing. 3 offers a tighter narrative, whereas NV provides a broader faction and dialogue experience. 3 boasts a bigger, more detailed world, whereas NV has more open areas between interesting spots—something fans of the original Fallouts often appreciate. Short version: 3 is a stronger adventure game, NV excels as an RPG.
