Turn off alerts and disable the sound on Windows Server. It’s going to be a tough experience using it for desktop tasks.

If it were a significant update, these are merely minor Windows security patches, not substantial. That’s another concern—once installed, another update could appear within a day or so.

Avoid turning off updates. Or switch to another antivirus, since Win Defender will be disabled and its updates will stop as well.

You're experiencing issues with your 2-year Kaspersky license, specifically when streaming on Twitch. It seems the software is flagging Twitch chat as insecure, causing interruptions. Additionally, you're concerned about Windows not alerting you to other updates.

I've discovered a workaround that lets me continue using Windows 10 Pro. I'm currently testing it on my work machine, and it appears to function properly.

The main issue with 2012 is that newer IGPs aren't compatible with manufacturers. That means you're stuck with a 1024*768 resolution. Not ideal.
