Considering the upgrade from i7-6800K to i5-11400F is reasonable. Your current setup with the GTX 1070 and video editing tasks is solid, and the Cinebench differences are noticeable. Moving to a newer i5 should still provide a noticeable boost for your needs, especially if you plan to keep using it for light gaming and editing.
