Exploring 12 mods in the Steam Workshop is a solid choice—especially with the stability it offers. There seem to be around 42 entries available right now.
My list is quite small... I currently have about 300 entries. I refined it last week mainly because troubleshooting occasional issues became too difficult. I own 158 plugins, though some are identical mods. At one point, my total plugins exceeded 350. I primarily use Realvision and all known texture mods. My rig (details below) runs around 42 fps.
Most of the mods I rely on are texture updates, along with armor and weapon changes. A lot of 4K textures are handy. At any point I had over 100 installed, using an ENB. The only issue is that new mods keep breaking things and I end up starting fresh. I’ve set aside Skyrim for a while due to the hassle of fixing my mods.

I generally use Nexus Mod Manager. I also got frustrated after purchasing Skyrim. I bought the game for 30 dollars, but on Steam it was about 7 or 8 dollars, which really upset me.
