Except when you handle it yourself. On most boards, it attempts to keep a 1:1 ratio with RAM up to 3600 (or 1800) for optimal performance.

Nothing will happen. You won't get any benefit at all—it's not worth it. In short: if you're seeing around 120 FPS in a game, a slight increase might come to 121 FPS after the upgrade. Unless you enjoy checking benchmarks. I'll revise this right away: it could depend on your system (we'd need more details), but honestly, @frozensun my point stands. It's a massive waste of money on RAM for such a minor performance boost. You'd be better off spending it on something else, like more games.
