It doesn't matter about the games. Still, I'd suggest picking 10 over 7 every time.

Windows 7 remains functional. A few minor issues have been reported with Windows 10, but they’re not critical. Microsoft continues to provide support for Windows 7. Consider saving 30 dollars for another game.

Latest DX12 games should perform better on Windows 10, so I’d opt for it whenever feasible.

Sure, I also use a flight sim that's launching soon, and it seems better optimized for Windows 10 than Windows 7. Plus, the games should run longer on Windows 10 too.

Ten would be the best choice eventually. I believe Flight Sim will function smoothly across different operating systems, possibly excluding XP and Vista.

I own an ASUS Strix GTX 1060. I prefer not to purchase from them. I reside in Aus and have access to a store offering excellent prices.

It's understandable to feel puzzled. Releasing a new version next month might seem odd if you're expecting an updated operating system. Creating a flight sim for an older OS could be due to specific needs or compatibility reasons.
