A Ryzen 3 seems like a weak option. The R5 3600 will likely suffice.

Wait for the 3060 and/or RDNA2, then upgrade to a stronger CPU unless you're playing at 1440p Ultra or 4K.

3600 now, nothing less. Then you upgrade to some Ryzen 4000 whenever it is needed.

I’d choose an 8-core processor without hesitation. Next-gen consoles will likely feature 8 cores, making it logical to ensure at least that many.
