The variations are mainly visual. If you were focused on fine details, MATE could have marginally less resource use compared to GNOME, though it wouldn’t significantly impact overall performance.

Check if using Terminal versus the Additional Drivers option changes how NVIDIA drivers are installed. Also, find instructions for downloading and running the .run file from NVIDIA's website.

I don't really care about MATE, but others suggested it won't make much of a difference. Lubuntu and Kubuntu are also good choices if you prefer a more Windows-like interface. In the end, there shouldn't be any noticeable change. Using the 'Additional Drivers - Proprietary' setting would likely be the simplest option.
