I’m torn between the 3300x and the Ryzen 5 2600. The 3300x offers superior gaming performance for my main tasks, while the 2600 runs without a BIOS update on most B450 boards and provides two extra cores plus four extra threads. The 2600 is $10 less. I’m also matching it with an ASRock B450M Steel Legend.

Well first of all workload? because the 3300x is better in a lot of cases unless it's purely multi threaded, also most b450 board ship with the new zen 2 bios at this point, and MSI's MAX boards do support it out of the box, if the board did not ship with the new bios, you could just ask the vendor/ computer store to update it for you. also do you already have this board? and are you limited to this one? well there's more to a cpu than core and thread count.

My tasks mostly involve gaming and studying (Excel, Word, PowerPoint, research). My GPU will be a 1660 Super.

Absolutely, focusing on a 3300x setup tends to be a stronger choice.
