Well, apples and oranges, they're similar in price on GMG. I really enjoyed most RE games I've tried, like 7. I haven't played a ME game yet but heard good reviews, and I think it offers better value. Call me frugal, but I tend to stick to games under $50 so I'm just starting now.
ME: LE isn't available yet tomorrow, and it's more expensive than buying the three games separately (probably because it's a remaster). I'd recommend picking RE:Village now. Mass Effect can wait, and while the end of ME3 isn't great, the trip there is still worth it.
It's worth it to play Mass Effect 2 with the upgrades they provided—it's one of the top games ever created.

I'm also thinking about getting the Legendary Edition, though I've seen mixed feedback on the remaster so I haven't decided yet. I've gone through all the originals, so it's not a top priority for me. The series is highly recommended. If you prefer something with a story focus and horror elements, RE Village comes in strong. It's shorter but the developers did an impressive job. If you enjoyed RE 1 and 4, picture 8 merging those with the visuals of 7 and the latest updates.
