The new task bar on Windows 11 is really not to my liking. I prefer PCs over Macs. I tried it last week and it felt completely foreign to me.

Remember that Windows 10 is likely to reach its end of life in 2025. That's not a very distant time.
If by the new task bar you mean the standard centered one, you have the option to adjust it for left alignment. The latest major update (23H2) has also reinstated the ungrouping of icons if that was your preference. Otherwise, there are several shell modifications you can apply to revert to the older task bar design.
It's really frustrating for me. I just need a Windows that's simple, efficient, and user-friendly. It shouldn't transform my PC into something like a tablet or a Mac.
Windows 11 behaves almost identically to Windows 10. You might need to invest around 10-15 minutes in the Personalization section of Settings, but that's roughly all you'll need.
If you prefer a simplified, quick, and straightforward experience, consider a more user-friendly version of Linux.
