I'd wait for the W10 release. It's not fully polished yet—it's still a bit unstable and slow, and the driver support isn't great. You can install 8.1 right away; upgrading to 10 will be easier later on.

It's unclear what price a key would cost, but Windows Server 2012 offers very little in the way of bloat. If you're looking for something different, you might want to explore other options.
