You're welcome to choose any 8th, 9th or 10th generation CPU paired with an i7 processor.
For any 8th generation processor, it works. For newer models, compatibility relies on the motherboard and any available UEFI updates.
Intel's 10th generation desktop CPUs will run on a new chipset with a different pin configuration (we're naming it "Z490" currently). This means it won't work with older systems. The "9th generation" refers to the Coffee Lake Refresh line, so an i7-9700 would be compatible if your motherboard supports it. Retail boards should work, though I'm not certain about OEM models like HP or Dell.
