You've got a fresh PSU and a new EVGA 1000 G2. The issue is missing cables for your RTX 3070TI, but you have PCI-e options with empty pin sockets. You can likely use the spare cables from your old PSU, just check the pinout matches. For the slots, look for the PCIe x16 slot (usually labeled) and connect there. No adapter needed unless the pin configuration differs. If unsure, it's safer to source compatible cables or wait for a newer RTX series.
The machine has been behaving oddly. You might have switched the PSU. To run a 1200W high-end $230+ system, you’ll need something like a 3070Ti. The Seasonic’s 2-pin PCIe cables will fit the GPU, as they do there.
Just use the cables that came with the Vertex GX It will work just as normal. do NOT use the EVGA cables with your Seasonic Vertex PSU, this is very bad. Dont ever swap cables between PSU's. You are not doomed, the missing pin socket is fine and you can use the Vertex PSU with your 3070Ti
Be careful, or you might damage things! These modular cables are unique to each manufacturer and can't be exchanged between brands or even within the same brand. It's typical, so don't be concerned.
