It's feasible, though not ideal since the 2008 R2 reached end-of-life beyond extended licenses after two years. You should prioritize Server 2012 or later.

It's not advisable to use server 2008r2 anymore since it's no longer supported. You might enjoy locating older drives on current systems. For 2008r2, consider using a hypervisor or running it inside a virtual machine—this will resolve compatibility issues.
