Can we set up macOS on this system? The hardware includes an AMD Ryzen 5 2600, an Asus ROG Strix B450-e gaming graphics card, an Asus RTX 2060 with 6GB GDDR6 memory, and a SATA 3 and PCIe NVMe SSD. Please let me know if you need help.

Perhaps. Your results might differ and it could be a bit frustrating, but there are resources available. https://vanilla.amd-osx.com/

Yeah, it works fine, but the newest Nvidia GPU hasn’t gotten macOS support yet. The 2060 can only run in software mode, causing the whole system to slow down and making it almost impossible to use.

It's also an Nvidia GPU, but I doubt it will function properly.

Choose an Intel GPU built-in processor. For graphics cards, select AMD. Nvidia does not support mac OS anymore.

I believed the final NVIDIA GPU model supported was the 900 series.

It seems Apple kept backing the 900 series. You could also watch the Linux Tech Tips video about getting it to work with a Ryzen CPU, and I believe a NVIDIA Titan XP is involved.
