RAPID mode relies on RAM for storing information. It's not useful to compare it with other methods. NVMe devices aren't designed to benefit from this approach.

It ran fast on Rapid before 980 at 3k/2k, but the performance dropped afterward. To boost speed on that version, try optimizing settings or checking for updates.

They both use M.2 form factors. The issue lies with the 980 Pro being a PCIe 4.0 device. It seems you likely only have PCIe 3.0 support or are using a slot that doesn’t accommodate PCIe 4.0. PCIe 4.0 offers double the data rate of PCIe 3.0, which is essential for achieving 7000MBps.

SATA reached a maximum of 6k but hit 7200 on my 860 EVO? Also, PCIe 3 offers better performance than SATA, allowing you to achieve those speeds with a 980.

I don't understand what you're referring to. SATA reaches its limit at 600MBps and stops working. PCIe 3.0 has a maximum of 3500MBps, so no matter the drive, you won't exceed that. Whether you use a 7000MBps rated drive in a PCIe 3.0 slot still caps at 3500MBps. I'm not sure what technology you're using to measure read/write speeds—it might be incorrect or misleading, comparing things like RAM caching to disk write speed in a way that doesn't hold up.
