Choose the folder to display icons rather than a list, and the album cover will appear as the standard preview. Confirm this in iTunes settings. If no cover exists, you can add it through iTunes.

That's funny, I see what you mean. In Windows Explorer it seems to work differently depending on the albums. Some still show the iTunes icon while others don't. Regarding making icons the default view mode, you can adjust the settings in the folder properties or use third-party tools to change how folders appear.
