Hello. I plan to enjoy the following titles:
-Red Dead Redemption 2
-Control
-Days Gone
-Shadow Of The Tomb Raider
-Metro: Exodus
-Assassin's Creed: Valhalla and Odyssey
-Far Cry 6

System details:
CPU: Intel Xeon W3580 4C/8T 3.33GHz (Stock)
Motherboard: Intel DX58SO
Memory: 12GB (4+4+4) Kingston DDR3 1600 MHz
GPU: AMD Radeon R9 280X 3GB GDDR5 384-Bit (Sapphire Tri-X OC)
SSD: Samsung 870 Evo 500GB SATA

Could it operate? Yes
The performance is satisfactory but varies with the configuration.
On an older Radeon GPU, using the Amernime zone driver (or NIME driver) could improve DX12 performance relative to standard drivers.

It is possible, but whether the performance meets your expectations depends on what you find enjoyable. You won't achieve a consistent 60 FPS, and 1080p will be challenging. A stable 720p might work better with that GPU.
If I had to estimate, you'd likely manage to play Assassins Creed Odyssey at around 30 FPS in 720p with decent graphics. That assumption comes from my experience with mobile devices, which gives me a sense of the processing limits here.
You won't be able to confirm if it's worth it unless you actually test it. If it handled Assassins Creed or RD2 well, it should work fine for them. I’d suggest going for Assassins Creed Odyssey instead of Valhalla.
For fans of FPS titles, the Halo Master Chief Collection should perform nicely at 1080p on that system.

It wouldn't be a pleasant experience, in fact. The CPU and GPU are outdated and insufficient for these games.

What's the point of asking? If you have the setup, give the games a try and check your performance.
If you're considering purchasing that system, most opinions agree—you won't be satisfied.

As someone who has that same graphics card and a much less impressive processor, I would say you will probably not have a great time. That said I really enjoyed Rise of the Tomb Raider on my machine at 1080 low. Metro last Light runs decently but haven't tried Exodus. My machine chugged through Assassin's Creed Unity so I don't think Odessey or Valhalla are in the cards for that machine.
