I own an RTX 5060 overclocked for two weeks.
I have an I5 12400F, 16GB DDR4 RAM, and the Asus Prime H610M-K motherboard.
I'm unsure which monitor resolution to choose and what graphics card settings will work best.
Currently, I'm achieving 60-70 fps in RDR2 Ultra at 2560x1600 resolution (with the overclocked GPU).

With 8GB of VRAM you should comfortably handle 1080p. For 1440p you'll require additional VRAM, and an RTX 5070 or better GPU is recommended.

Because like you, you have only 8 GB of VRAM. It really depends on the game. I own a Haswell with an RX570, and with FG I can achieve 40 to 60 frames per second at 1440 on Stalker 2, Cyberpunk and similar titles. So far, my setup has worked well by boosting textures to higher settings. However, I have an older system and your newer 5060 might not perform as well for me. As mentioned, you might need at least 12 GB. But you know what? Give it a try and observe the results. Things can crash if temperatures rise too much. Let that Nvidia card earn its place.

It really just depends on the game and how low in graphics settings you're willing to go, or that the game will run well. DLSS is actually really good now, so I don't see much reason not to use it to get at least 60fps at 1440p.
You could try using frame gen if you're not against it, but if a game is already vram limited, frame gen may make performance worse for the base fps with or without DLSS on. You really want minimum 40-50fps for the base fps and ideally 60-75fps for the best lower end frame gen experience.
Appearance seems quite good to me. I suggest using 144hz. Your system handles UltraWide 3440x1440 well, I'm not sure if your processor would limit you.
For a new 1440p or 1080p monitor, aim for a resolution of 1440p or 1080p. In most games at 1440p, you can expect a higher refresh rate and smoother graphics compared to older resolutions.
The minimum is 120Hz, but 144-165Hz options are quite affordable even on 1440p screens. I haven’t been closely following monitor reviews or new releases, so I’m not the ideal person to advise on the best display to purchase.
