Looking here: https://www.gigabyte.com/Motherboard/B66...rt-dl-bios I see many bios version to pick from, F2 to F21, I presume we're supposed to pick the last one F21, I also see a warning: but for a brand new MB (which needs to be updated for 13th gen) where am I going to update the Intel VMD, do I also put it on the usb stick before flashing.

Absolutely, the most recent updates always incorporate improvements from previous versions. If you don't plan to use RAID, the subsequent section is irrelevant.
