I'm planning to purchase a mainstream laptop suitable for various tasks, keeping the cost under €500.

I tend to favor Intel in this price range, especially the latest models. The AMD 7000 series below a certain threshold is essentially rebranded from older generations.
If you manage to find a refurbished AMD laptop with a 7840HS or 8845HS, that would be my top option.

Wouldn't require more than 16GB on a Windows system.
I'd consider buying from the second-hand market.
