You can clone the SSD using Windows without needing a Mac. There are tools available that allow you to create a backup copy of the drive and then wipe it afterward. You can transfer the cloned data to another HDD or external drive as needed. The 2TB Airport drive could also serve as a backup option if you have space.

Transfer only what you need from the Mac to another drive without backing up everything.

they often say i should just back up my important files. user created data...most of the other stuff is just operating system and programs that can be easily reinstalled (make sure you have the serial numbers/keys for paid software).
