This might appear as a simple query, but are the b550 M.2 and Ryzen 5 3600 truly compatible? Or will I find out only after the release? (partpicker doesn't list b550s in its database)

Some motherboards produced at specific times will always run the latest BIOS, meaning every B450 board made after the third-gen Ryzen launch works with that generation. All B550 boards are built post-third-gen release, ensuring compatibility regardless of changes.
