You can still adapt the tutorial for a server setup while using Gnome installed. It won’t automatically change it to a laptop mode, so you’ll need to adjust accordingly.

A server is essentially a machine that provides its resources to others. Using GNOME won’t cause any problems. My Plex server runs GNOME since I’m not very experienced with the Linux command line. My suggestion is that if you’re not comfortable with the command line, consider enabling DE instead.

This appears to be a driver-related problem. It seems the driver might be missing from the installer or the Wi-Fi adapter isn't compatible with Linux.
