My rig-
Fx 6300
Asus strix rx460 4gb
10gb ram
With my specs, I can play gta v at full settings and off the audio.
I wanted to test if overclocking would help, so I used wattman, set the clocks to max, and the system crashed. It took several tries to get it running, and I was quite concerned.
I’m wondering whether I should try overclocking and how to do it properly.
Ps- msi afterburner didn’t work, because it kept resetting every time I clicked apply.

Overclocking your GPU would likely make a bigger impact, though definitely improving performance. Overclocking your CPU should still help somewhat given the limitations of the FX CPUs. You can't just set everything to maximum and expect results; you need to gradually increase the settings and check stability regularly. This process isn't easy.

I don't believe it's that. Could you clarify which driver or software you're referring to? What do you think it is?
I don't think so. I wonder if it's related to the driver or the WiDows defender. Maybe multiple programs adjusting GPU settings are the cause. Check the programs that appear during startup, remove them or end tasks in Task Manager, then try afterburner.
